It has been 10 incredible years of partnership with our friends at Bom Jesus, we have tasted the fruits of their labour and enjoyed the continuous improving quality with each and every harvest. Winner of the most sustainable coffee farm in the state of Sao Paulo, and placing 3rd in the nation for their dedication to excellence and environmental responsibility and the pursuit of producing coffee sustainably. Brothers Gabriel and Lucas are the 6th generation to become custodians of Bom Jesus and its 200+ employees and 4,500,000 trees. A focus on community, quality and innovation is driving the brothers to be leaders of the Brazilian coffee industry, which very much aligns with Commonfolk and our values. Mousse de Maracujá is exclusively made up of the Obata variety, a dwarf tree with large cherries that was crafted in the labs of Sao Paulo’s Agronomic Research Center. The scientists spliced together Timor and Villa Sarchi strains, with the goal of compounding the good traits and eliminating some of the bad. The result is a rust resistant leaf, a small but high yielding tree that grows well at low elevations. Ideal for the Brazilian terroir and has thrived since it was created in 2000, now even being used in Mexico and Honduras, replacing areas ravaged by coffee rust fungus with incredibly positive results. Mousse de Maracujá is named after the Brazilian dessert of passion fruit mousse, of which the tasting notes are akin. We are enjoying a sweet and tart passion fruit curd, decadent crème pâtissière and a crisp red grape acidity. Thank you Bom Jesus for another delicious micro lot, keep them coming.

NOTES :   Add 3x the dose weight of water and bloom for 30 seconds. Then add another 3x the dose weight of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
