Unicorn
Zukuka Bora partnered with the Bududa farming group five years ago to create an exquisite expression of natural Ugandan coffee. We fell in love with this coffee the very first time we tasted it. At the time, quality natural Ugandan arabica was almost nonexistent so we named the coffee the Unicorn in honour of its mythological reputation. We’ve been purchasing the entire Unicorn lot every year since. The majority of Zukuka Bora's farming partners occupy the northwestern slopes of the Wanale Ridge—from Bukhanakwa in the south to Sipi in the north. Bududa, however, is south facing leading to some truly unique characteristics expressed in the cup. Farmers bring cherry to the Zukuka Bora site where it is floated and visually inspected before drying. Zukuka Bora aims to pay the highest price for cherry on the mountain, followed by a bonus, but also requires the best quality cherry. Farmers are paid on the day for cherry, unlike other mills which defer payment until later in the season, which ensures the money goes directly to the farmers and their families. Only the ripest cherries are hand selected to be dried on raised African beds to enhance the intense fruitiness we enjoy in this coffee. Using a portion of the funds donated through The Cup That Counts, Zukuka Bora was able to invest in a state-of-the-art drying facility to manage the rate of air flow and sun the drying coffee is exposed to. This leads to better control of the cherry’s fermentation, and ultimately a better cup of coffee. The results speak for themselves, with this year's Unicorn micro lot exhibiting the highest cupping scores of any harvest to date. Aromas of ripe apricot lead into a cup full of juicy mandarin and fizzy sherbet that we've come to expect from the Unicorn.
