Two Fruits [2022]
Bom Jesus is our longest standing partnership coffee, it has been around for so long that it is in line for long service this year. We are excited to showcase some microlots from the same farm we have been buying from for nearly 10 years. The Two Fruits lot is a natural process Red Catuai grown on the family farm where all the coffees are processed in house. When we last visited we saw a handful of raised beds for microlot experiments. This is unusual for Brazilian coffees which are often patio dried. We have been purchasing this coffee for so long that the farm has been passed down to Flavia and Gabriel’s sons; Lucas and Gabriel Jr. This makes them the 6th generation to run the farm. The farm is home to 3,000,000 coffee trees, a mill, cupping lab and roastery onsite. Over 200 employees work at Bom Jesus, supported by onsite childcare. Two Fruits was named because it tasted exactly like canned fruit from your nana would give you on the cupping table, syrupy in the body and just as sweet. We work very closely with our friends at Minas Hill to import this coffee.

TIME : 2:45 - 3:15 minutes
NOTES : Add 30g of water and bloom for 30 seconds. Then add another 30g of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
