The Gang Buys A Washed Ethiopian

In this episode the gang buys a washed Ethiopian. This west Guji lot is an extended washed process, and consists of Bourbon and Typica varietals. Coffee cherry is delivered to the washing station where it is pulped and fermented underwater for 48-72 hours. It is then washed and soaked for another 8-16 hours before a final round of washing. The coffee is then dried on raised beds during the Dayman (ah-ah-ah), then stored inside before The Nightman Cometh. This lot is unique because of its varietals, not often will you find Typica and Bourbon in Ethiopia, but these classic South American varietals are a real wildcard move when grown back in Ethiopia. These really bold and complex varietals, combined with the exeptional washed Ethiopian processing has resulted in some crazy sweetness. This coffee is Sweet Dee-licious, look for notes of vanilla, honey and fresh peach iced tea. It’s Always Sunny in Philadelphia might be on its 15th season but this coffee will be lucky to last a month, get it while you can. We bought this coffee from our friends at Cafe Imports.

NOTES :   Add 30g of water and bloom for 30 seconds. Then add another 30g of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
