Commonfolk has always coveted a washed Ethiopian coffee, usually from the Yirgacheffe region in Sidama. This time a small washing station in the Jimma zone caught our attention with a delicious floral coffee from Mike Mamo and the team at Telila Coffee Washing Station (CWS). In 2019, Telila was established with the mandate to focus on quality control and experimentation, chasing impeccably clean washed lots like this one, but the best honey, natural and anaerobic coffees possible. The pursuit of this has led to innovation at every level, from lot separation based on specific subregions and also by processing method, to storing parchment in hermetically sealed bags prior to export. Composed mostly of 74110 and 74112 varietals from the Jimma Agricultural Research Center, these are both selections from extraordinary examples of heirloom coffee trees now propagated for their characteristics like resistance to leaf rust and high cherry yield. Osito contributes 10c for every pound purchased from Telila to projects at Kacho Tulla Primary School focused on building future leaders and a strong community. We took a liking to the hints of lavender, tart white nectarine and round honeydew melon sweetness. Another quality coffee washed Ethiopian in the books, thanks to our friends at Osito and the team at Telila (CWS).

NOTES :   Add 3x the dose weight of water and bloom for 30 seconds. Then add another 3x the dose weight of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
