It has been 10 incredible years of partnership with our friends at Bom Jesus, we have tasted the fruits of their labour and enjoyed the continuous improving quality with each and every harvest. Winner of the most sustainable coffee farm in the state of Sao Paulo, and placing 3rd in the nation for their dedication to excellence and environmental responsibility and the pursuit of producing coffee sustainably. Brothers Gabriel and Lucas are the 6th generation to become custodians of Bom Jesus and its 200+ employees and 4,500,000 trees. A focus on community, quality and innovation is driving the brothers to be leaders of the Brazilian coffee industry, which very much aligns with Commonfolk and our values. The fresh and ripest Mundo novo cherries are collected and kept aside from their normal allocation to Bom Jesus. They are then isolated in an open tank for aerobic fermentation to begin, breaking down the sugars in the cherry and enhancing and accentuating coffee's complexity and intensity. The coffee is always exposed to air during this fermentation, consider it like controlling and intentionally ripening a banana in preparation to make Pão de banana (banana bread) or an avocado you forgot about. A great juxtaposition of the Mundo novo cherry when processed differently, showcasing sweet butterscotch notes with hints of walnut and caramelised banana. Mundo novo is a workhorse of a varietal, this expression is an elevation of an overlooked coffee normally reserved for just blending.

NOTES :   Add 3x the dose weight of water and bloom for 30 seconds. Then add another 3x the dose weight of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
