Masika

Masika is so named for the rainy season across Uganda, Bulaago specifically being one of the wettest. It seemed only too coincidental we released this coffee at the same time as La Niña is rearing her head again, and whilst Morno itself has been a touch floody, it’s nothing compared to the slippery slopes of Mt. Elgon. Imagine driving 130 kilos of coffee from the top of a mountain during downpours, even more chilling doing so on the back of a boda boda (motorcycle). This is Zukuka Bora’s second harvest with Bulaago, with support funded via The Cup That Counts. Zukuka Bora exists to empower farmers and return sustainable and regenerative enterprise to a once thriving coffee region. We contribute 20c from every coffee we sell towards the initiative and this has helped Zukuka Bora purchase demonstration farms, build processing centres, buy machinery, and provide training and employment to more than six coffee farming communities. Honey processing is kind of a hybrid between natural and washed; washing the cherry away, then allowing the sticky mucilage to ferment together, causing a stretchy, syrupy honey-like consistency. This lends itself to great and broad flavours such as tangerine, jasmine and pear in Masika. We imported this and all other Zukuka Bora coffees independently, and will continue to do so and support the growth and sustainability of their farms and producers. TIME :   2:45 - 3:15 minutes

NOTES :   Add 30g of water and bloom for 30 seconds. Then add another 30g of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
