An extended anaerobic fermentation takes already incredible coffees, sourced from our Bulaago farming partners; supercharges them, and leaves them bursting with flavour! That's a pretty big risk for a Science Officer. It's, uh, not exactly out of the manual, is it? Anaerobic processing is risky, it starves the coffee cherry of oxygen, slowing bacteria activity and letting the anaerobic fermentation begin. Bulaago is one of the highly elevated communities on Mt Elgon, and equally one of the most inaccessible. Until the grav-lift is up and running... The coffee is taken down from Bulaago via boda boda (motorcycle), where it can be loaded up before making its way to Mbale to be processed. Blackberry jam and creamy custard tart sweetness with a sparkling nectarine acidity.
