It has been 10 incredible years of partnership with our friends at Bom Jesus, we have tasted the fruits of their labour and enjoyed the continuous improving quality with each and every harvest. Winner of the most sustainable coffee farm in the state of Sao Paulo, and placing 3rd in the nation for their dedication to excellence and environmental responsibility and the pursuit of producing coffee sustainably. Brothers Gabriel and Lucas are the 6th generation to become custodians of Bom Jesus and its 200+ employees and 4,500,000 trees. A focus on community, quality and innovation is driving the brothers to be leaders of the Brazilian coffee industry and is also very much aligned with Commonfolk and our values. Hot Toddy is a Yellow bourbon peaberry varietal, believed to be a cross pollination discovered in 1930, Yellow botucatu (a Typica mutation) and Red bourbon grown close together birthed a new varietal that had surprisingly high sweetness and complexity, even when grown at low elevations. This coffee is a peaberry, a natural mutation where only one small, round, seed develops inside the cherry instead of two. Hot Toddy has notes of stewed blackberry with a lemon acidity and honey sweetness. Make sure you try the other natural Bom Jesus microlot, a Red acaia we have called Cosmopolitan.

NOTES :   Add 3x the dose weight of water and bloom for 30 seconds. Then add another 3x the dose weight of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
