Invisalign, the cordless drill and Tang. You would be incorrect if you thought these were the only benefits that space exploration has provided mankind. The little known Cosmic Butter was a top secret project, started within a bunker hidden deep in the hills of Huila. Everything taken to space was carefully considered, things that have multiple uses are like gold to astronauts. The brief was to create a suitable space lubricant that could also become a back up food source if required. The project was derailed when an oafish technician accidentally spilled a mug of coffee into the only prototype churner in the facility. The project was abandoned and the failed batch disposed of in the neighbours spent cherry pulp to be later used as compost. This infused, nutrient rich butter was spread all over a local coffee farm that would one day be bought by Derlin and Diego, named Diamante. The butter-compost seeped into the soil and super charged the hungry coffee trees, the leaves sporting a sparkly sheen from then on. The cherry produced was glossy and ideal for an extended fermentation, void of oxygen just like the original project had intended. After 48 hours in sealed tanks the butter-cherry was removed and slowly dried until a beurre noisette concoction was achieved. This distinctive coffee manifested itself as a sweet passion fruit curd, bright paw paw and creamy Eton mess.

NOTES :   Add 3x the dose weight of water and bloom for 30 seconds. Then add another 3x the dose weight of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
