In classic Commonfolk style we have found a weird and wonderful coffee, this time in the form of a relatively new varietal called Marshell. Sharing a lineage to the Bourbon varietal, it has similar characteristics like complexity and a medium silky body, which in the Marshell has turned super creamy and sweet. Maria Flor and her partner Efrain are 2nd generation farmers, both learning about coffee farming from a young age and now giving their daughter the same exposure to the family business. Finca Cerro Azul is located in San Ignacio Perú, sitting 1798 metres above sea level and with a reputation for excellent coffee. Maria Flor and Efran have taken 2nd and 3rd in the Cup of Excellence and are shooting for the elusive number 1 spot. With incredibly meticulous processing like this natural, which is placed in airtight bags for 36 hours before it dries for 30 to 40 days on the main patio, this results in a very clean natural processed coffee with flavours of creamy lemon cheesecake, black cherry acidity & charred pineapple syrupy sweetness. This coffee was scored as AAA and Maria Flor and Efrain have received a bonus for reaching this level of quality. We purchased this coffee from our good friends at Caravela and are excited to showcase unique unheard of varieties like Marshell.

NOTES :   Add 3x the dose weight of water and bloom for 30 seconds. Then add another 3x the dose weight of water and bloom for 30 seconds. Then steadily add the remaining water over the next 30 seconds. Aim for 3 minutes total brew time.
