Finca Tamana
We're chuffed to work with Don Elias. He and his wife Bellany purchased Finca Tamana over ten years ago and wasted no time building a great reputation. We asked if 'Tamana' means anything special, but no, it's just a really nice sounding name. Beyond the continual development of the farm and infrastructure, there is a genuine care for people. Coffee labour is migratory across Colombia and South and Central America, and the team of pickers that work at Tamana seek to return year on year to be part of the production season. You'll find clever improvements throughout the production spaces, including parabolic dryers and raised drying beds built from metal rather than timber, and stainless steel fermentation tanks. Commonfolk's first washed micro lot from Finca Tamana is a day lot built with ripe Caturron cherries, a pretty unique varietal. The whole cherries undergo 24 hour fermentation in an open hopper before depulping and a secondary 26 hour parchment fermentation. The washed parchment was then soaked for 12 hours, which is suggested to improve both quality and shelf life. Get sipping for cantaloupe feels, while flavours take your mind to cacao nibs and raspberry sweetness. Commonfolk has sourced this coffee directly from the family, with thanks to buds at Caravela for expert export services.
