Los Campeones

When we first released Los Campeones [the champions] in 2021, Diego Campos was the current Colombian Barista champion and Derlin Roa the Colombian AeroPress champion. We named the coffee in their honour. It turns out we were just a little bit prophetic because later in the year Diego would go on to be crowned the World Barista Champion at the world championships in Milan! To say we’re thrilled for our good friend would be a massive understatement. We can’t think of a more humble and deserving champion. Thankfully we’ve got our hands on this exceptional micro lot for a second time and we’re incredibly excited to introduce you to the fresh harvest of this coffee. We’re stoked for Commonfolk to continue our partnership and to share their excellent work with our part of the world. With their first producing season under their belts Diego and Derlin have improved and refined their processes. Their hard work and dedication has paid off and helped elevate this year's crop to even higher quality than last year. Only select ripe cherries from their Castillo varietal trees were floated before numerous fermentations and washing. First, the whole coffee cherry was fermented for 36 hours. It was then pulped before a secondary 36 hour parchment fermentation. A final 12 hour soak in water and this parchment was laid out to dry for 15 days. Look for notes of lime and dates with a ruby grapefruit acidity. We’re proud to be working directly with the Campos Roa family, importing their coffees ourselves with special thanks to Caravela for their quality export services.
