In 2013 our importing partners, Caravela, committed to the Nueva Segovia community and its farming partners, establishing Beneficio La Estrella the coffee mill down the hill in the town of Ocotal. Beginning with a team of 5 agronomists working on the ground to advise and educate in best harvesting and processing practices, the facility was 5,000 m2 with shaded raised beds in 2014 and serviced 60 coffee producers. Now it has grown to 14,400 m2 of 3 level shaded beds, 63+ staff and 2 cupping labs which produced over 8,000 bags of coffee in 2019. The La Estrella mill project has grown due to the local farmers seeing the year on year commitment to them and paying farmers well for quality coffee. Caravela works on a fixed price model for cherry which is 30c above the average Farm Gate price for the area. Coffee is then processed and graded where premiums are paid for higher quality coffee. Up to an extra $1.35USD per pound can be paid for coffee scoring above 86 points. You are enjoying a blend of coffees brought to you by many farmers and curated by the team at La Estrella. The La Estrella blend has a soft stone-fruit sweetness with a nice chocolate and nut undertones.

NOTES :   Add 60g of water and bloom for 45 seconds. Then slowly add the remaining water steadily over the next 45 seconds.
