These are the apples Will Hunting was talking about. Little known fact before being a janitor, the genius Will was a top notch barista in Boston. He is old school though, no scales or gadgets, he dials in by eye and watches for the blonding before cutting his shot. No alternative milks either, you are lucky if you get skinny milk when you ask for it. Will comes from the ilk of barista who frowned on those who would deface a brilliant washed coffee like this with milk. Guatemalan coffees have always been his favourite, this one in particular is a stand out from the Huehuetenango region. Grown at 2000 meters above sea level, composed of Bourbon, Villa Sarchi & Typica varietals this combination has great balance and complexity, everything an elitist barista loves. Will claims to get flavours of baked apple, peach iced tea and maple syrup. So that famous altercation outside was actually about tasting notes, can you blame the guy? He just wanted to know if the customer liked “them apples”.
