Here’s our very first micro lot release from Diego and Derlin, named after their little one, Sofi, who is an inspiration for Diamante Coffee Farm. Family is the reason they’ve returned from the city to begin their own journey as coffee producers. Derlin’s folks are seasoned pros with a reputation for quality coffees and community at Finca Tamana. They’re helping Diego and Derlin establish this new farm an hour away in the high elevations and beauty of La Plata. Get sipping on one of their first micro lots, a labour of love! This lot has been built with select ripe cherries from their Colombia varietal trees. Cherries were floated before numerous fermentations and washing. First was 24 hours fermenting as whole coffee cherry, then pulping before a secondary 24 hour parchment fermentation. A final 12 hour soak in water, and this parchment was laid out to dry for 17 days. Look out for yellow nectarine feels and peach tea sweetness, especially on the cool. We’re proud to be working directly with the Roa Campos family, importing ourselves with special thanks to Osito for their quality export services.

NOTES :   Add 60g of water and bloom for 45 seconds. Then slowly add the remaining water steadily over the next 45 seconds.
