Carbonic Maceration (CM) mania is sweeping the coffee world, so we are jumping in to see what it is all about. CM is a process that uses CO2 to remove the oxygen from coffee during the fermentation process. Removing the oxygen, controlling the temperature and humidity means we can introduce yeasts and yield some very interesting and unique flavours. This coffee is a CM Natural, meaning the cherry has been left on. This will produce really intense flavours, turning everything up to 11. Enjoy this extremely limited coffee while it lasts.
