Little Farm AA [2021]

Little Farm was established in the 1990’s, and has 20+ hectares of coffee trees (maybe not that little after all). The Nakura region is packed with rich, red soil, great annual rainfall as well as multiple boreholes and dams for ample clean water. This is perfect for healthy coffee trees and delicious washed Kenyan coffee. Little Farm is also very precise with its washed processing methods. Cherry is carefully monitored for perfect ripeness. The ripe cherry is picked in the morning by hand where it is then spread out in the afternoon sun and picked free of anything less than perfectly red, ripe cherries. The coffee is then loaded into an extremely clean and maintained pulper where the cherry is removed and the sticky coffee cherry then floats into a channel. The lighter beans are skimmed out and the good quality dense coffee is then put into a tank to ferment overnight. The following day the wet mill manager will determine when the sticky mucilage is gone and the coffee will move to the sloped channel. The coffee will make this journey down the sloped channel multiple times, removing floaters and coffee that moves too fast, leaving just the dense coffee. The coffee is then dried on raised beds, covered when rain is coming, and then packed into hermetically sealed bags for export when ready. NOTES :   Add 60g of water and bloom for 45 seconds. Then slowly add the remaining water steadily over the next 45 seconds.
