Froot Ninja [2021]
Every brew of this coffee is a fruit combo for your tastebuds. It’s exciting to be sharing naturally processed micro lots from our pals in central Huila. They don’t come easily and require commitments from partners like Commonfolk to share the risk in producing them. It’s quite tricky to dry coffee cherries naturally in Huila’s high elevations, predominantly due to the regular rainfall and need for extended periods of sunshine. It’s challenging to control the fermentation, combined with the non-traditional flavour profiles and higher costs of production. This micro lot is built of coffee cherries from Finca Tamana’s Colombia varietal trees. They were fermented anaerobically as whole cherries for 36 hours, before 20 days drying. We’re really lucky to have Diego’s enthusiasm and desire to push the needle on processing. His in-laws, Don Elias and Bellany Roa, own Finca Tamana and are exceptional coffee producers previously hesitant to produce naturals, as expected. But this small experimental lot has proved a massive success. Stop reading and start sipping flavours reminiscent of watermelon and creaming soda. We’re proud to be working directly with the Roa Campos family, importing ourselves with special thanks to Osito for their quality export services.
